This is the real concern, and there are practical solutions. Olive oil lasts about 18 months from harvest if stored away from light, heat and air. When you buy 10 or 20 liters:

• Keep large quantities in stainless steel containers or tins in a cool room below 20°C
• Fill a 0.5L dark glass bottle for weekly use and keep in the kitchen
• Do not open the large container more often than necessary, because air is the main problem
